Salad, Salad, SALAD!

Cabbage, spinach, carrots, cucumbers, snow peas, and toasted almonds.
DRESSING: vinegar, olive oil, garlic, and coconut water.

Day 1 – Went GREAT! Food was good, I wasn’t hungry BUT… I sure was cranky.

Detoxing my body is proving to be annoying. In addition to a headache from cutting coffee (caffeine), my lymph nodes are swollen from the effects of my body trying to rid itself of all the junk I put in it the day before this challenge.


  1. AHHHH!!!! Don't set yourself up for failure! Don't simply cut all carbs and hope you won't freak out; taper the carbs using strategically consumed sweet potatoes. You can only shift to a fat metabolism so quickly, and if there is a "no fuel" period of time, you are extremely likely to fail. Add fat (lots of it) and eat sweet potatoes as needed to curb cravings.

    You will discover that you naturally (and without realizing it, probably) eat less and less of the sweet potato crutch.

    And, why cut the caffeine?

  2. Veggies have carbs... I am not sure I understand all the "need" to eat item but good advice, I'll get some sweet potatoes for sure. I am not having cravings yet and not sure if I will since I was low carbing before this Whole30 thing.
    As for caffeine... I don't like coffee/tea without splenda and cream and if I drink all that other stuff I don’t drink enough water, so I chose to just stick with water for 30 days.

    I make a Big Ass Salad for lunch all of the time. Try out this salad dressing if you want to change it up a big!

    1 tsp Dijon Mustard (make sure it's whole30 OK)
    1 tsp vinegar (I use champagne vinegar, but you could also use lemon juice or something else)
    1 egg yolk (RAW BABY!)
    Olive oil

    Whisk the crap out of that and see how it tastes. Sometimes I add in anchovy paste or some crushed up berries for more sweetness. If you're not down with the raw egg just leave it out!

  4. Just went to the store and got all that is needed to try your dressing. Finding Whole30 Dijon was hard but we found one for $$$$... it's all good.

    We also got sweet potatoes, onions, sea salt, and fruit. It's eye opening reading labels and seeing how much "crap" is in the prepackaged foods.

  5. As Sean posted, a great paleo dressing is hemp oil mixed with some coconut milk. I've even added a splash of lemon juice and some fresh herbs to give it a little bit of tang.
